Thai Red Chicken Curry

What a great quick meal. I have done this on the gas stove many times but the Kamado Joe takes it to a new level (only because it's outside)......

Red Curry Chicken

We like to serve this traditional Thai curry with steamed Jasmine Rice.

INGREDIENTS

2 tablespoon vegetable oil

2 tablespoon Red Curry Paste

2 lb skinless, boneless chicken breasts, thinly sliced

2-13.5 oz can Coconut Milk

1 red bell pepper, cored and sliced

1 green bell pepper, cored and sliced

2 bunchs scallions, chopped

4 teaspoons Fish Sauce

4 teaspoons lime juice

4 teaspoons brown sugar

1 cup loosely packed fresh basil leaves

Cooked Jasmine Rice

 

 

DIRECTIONS

1.              Heat oil in a large skillet on medium-high heat.

2.              Add Curry Paste and stir until bubbling.

3.              Add chicken and brown on both sides.

4.              Add Coconut Milk, bell pepper, scallions, Fish Sauce, lime juice, brown sugar and basil.

5.              Simmer until chicken is cooked.

6.              Serve with Jasmine Rice.

Got some in the fridge right now. Might try this tomorrow night with shrimp instead of chicken.

Did this last night with shrimp. The flavor was spot on. Everyone liked it even my son who is not fond of curry dishes. I agree go heavy with the curry paste. 

Next time I do it with shrimp I'm going to manage the cook a bit different. Curry season the shrimp and Grill them to almost done. Then add the shrimp into the rest of the ingredients when there is only a couple minutes of cooking time left.

Excellent news. Glad you tried it and thanks for letting me know. I'll have to give it a try with shrimp as well.

That looks delicious. We make a traditional yellow curry that's ....ok... But this looks phenomenal!!

tried this recipe tonight and it turned out pretty good!

I was in the mood for a slightly thicker sauce, so maybe I'll add a little slurry near the end next time - but overall, great flavours and it sure made the house smell :)
