Meatloaf on the Classic

Here is a meatloaf that was cooked on the KJC I used Jackjumpers bunt cake pan method mainly just to get the shape. Then I let it sit in the refrigerator for thirty minutes then flipped on to parchment paper. The round one was basted with Guy Fiery bourbon BBQ sauce and the smaller one with Ketchup. Meatloaf was served with some Costco Mac n Cheese and some mashed potatoes with brown gravy. The meatloaf had a nice crust but honestly it was a bit dry, I much prefer cooking it in a cast iron. Thanks Jack, not as good looking as yours but it was delicious. It was made up of ground pork and ground beef. Next time I will use a 80/20 ground beef instead of 90/10 and less bread crumbs

Your photo looks like you cooked on parchment paper right on the grill??? I cook on parchment paper a lot but always been in pans. Even indirect, i would think it would burn up??? Meatloaf looks great : )

Thanks Mike the parchment paper didn't burn but I did get a nice bottom crust.

Last time I used 80/20 ground and no pork and it was juicer than the 80/20 with pork.
