Roasting Garlic

I was making some homemade tomato sauce this afternoon and decided to use roasted garlic instead of raw.  I got out one of my little cast iron cocottes that I recently purchased and put a nice fat bulb of garlic in it with the top sliced off.  I drizzled it with EVOO and roasted this covered in my toaster oven at 400°F for 35 to 40 minutes.  

 

This stuff is great for so many things....

I didn't put much in the sauce.. just enough to get a hint of it... I used 4 cloves of roasted garlic to a 28oz can of tomatoes...

I did your spaghetti meatballs last week, but I smoked the sauce for 4 hours with a little bit of apple wood and used zucchini noodles. Turned out fantastic. Doing it again soon and will add roasted garlic this time. Thanks for the tip and all the great recipes!

John, looks great.  

 

the roasted garlic freezes well.  I would roast six heads at a time, then store them.  Same with carmelized onions.

Great pic.

 

A little roasted garlic with olive oil and nice bread is a treat.  I love the smell of it roasting.

I love roasted garlic.....wife, not so much.  I've often wondered if she's a vampire incognito. She hasn't drawn blood but she has bit me a few times in the past.   :roll:

Love! , love! love!! roasted garlic its so sweet so goood!!  I love the way it mellows out. I toast some baguette on the grill drizzle olive oil and some sea salt and spread the garlic while the the bread is still warm so good!!

Try dipping your toasted baguette with a schmear of roasted garlic in some balsamic vinegar and top with diced tomatoes, basil, and a thin slice of buffalo mozzarella cheese for a really heavenly appiteaser.  Your family will give you rave reviews!
