Hello from Austin, TX!

New member here, checking in to get started.

I'm an ex-stickburner driver now in charge of a Pitboss 24" Kamado..the latest 2017 version..with a spark screen on the inlet air control door, a heat diffuser and two level cooking grates.

Been doing some forum surfing here and other BBQ forums to get up to walking pace and have done three test burns, one teeny fire, one on-purpose temp run away test and one long and low burn at 250 for 10 hours, to get a feel for the vent settings and to see what she wants and needs to keep cooking..

I think I'm ready to cook some meat but of course many questions remain unanswered...for now.

Agreed, the main things that motivated me to make the change was the fact that it's just too dang hot outside to babysit a stickburner for 10/12 hours..

AND finding good post oak has become a real challenge, maybe it's the Franklin craze that's taken over Austin, but in addition to high quality post oak being next to impossible to find, it costs way too much, and may or not be worm eaten and over dry.

So what, they've stopped growing pecan down there? LOL

Yeah, post oak has defintely becomethe craze. As if, using it will make someone the next Franklin...
