Lime Lovers Dream

Sriracha lime chicken and onions served on a bed of lime risotto with a side of grilled lime carrots. 

 

I normally cook by the seat of my pants but....... This was a multi part cook using 3 kamados and an outdoor burner.  I figured I better scribble some notes so I don't forget anything.

First we needed to properly lubricate the chef with a Blackcurrant Lime Vodkatini or 3. After being properly lubricated the above notes proved very helpful - LOL

I love these challenge cooks to really push me. Fairly simple recipes. The hardest part was firing up and managing 3 kamados while cooking the risotto on the outdoor burner. All round good cook. Probably the best carrots I've ever cooked. Set a new standard for carrots at the Bistro.

TY In2Fish - probably could have done it on one kamado but 3 was just easier and allowed everything to finish at the same time. Plus it's been a while since I played with the Akorn Jr.

Sign me up for a few of the vodkatini's as well.  Best way to start a cook. And loves the notes - lol. The carrots are beautiful, chicken looks perfect, and anyone who can knock out risotto like that has my admiration.

The vodkatini's were definitely kicking. After a few of those the notes were a must have. Not really recipes and I mainly winged the amounts but I didn't forget any ingredients. 

 

I love making risotto. Once I figured it out it's been a really easy cook ever since.  I do it on my outside burner. Have the stock warming in a small crock pot and all the ingredients on a tray in the order they're used. From turning on the burner to turning it off 40-45 minutes. As long as I time everything else right it's all done at the same time.

Definitely lime all the way especially the risotto. Those carrots were to die for. If I can find the  small carrots like that they'll be my goto carrots. Of course I'll pull off the greens in the future.

I have refrain from posting til now cause I don't like lime in food only with the exception of homemade salsa. But... But I really enjoyed the chicken.. It was loaded with flavor with the saute onions and the carrots were very good and tender but not mushy. The Risotto was a bit to lime-me but the texture was perfect.. Exception of the lime flavor, I think this was his best Risotto to date. Over all,  this was a Winner. Great job managing all your grills and burner like a pro.. Thanks for another great meal.

You're right the risotto was definitely lime-me - LOL. But I love lime so all good to me. It was a "Lime Lovers Dream"
