Beef Ribs on the Kettle

I am cooking with the Adrenaline BBQ Company Slow 'N Sear basket... @Baby Back Maniac has one of these also... 










This is an interesting device that sits inside the kettle between the charcoal grate and the cooking grate.  It's a rather simple basket that creates a minion method end-to-end burn of the charcoal.  It also has a water trough that helps keep the environment inside the kettle more moist than it would be otherwise.  


I put this rack of ribs on about 90 minutes ago and this kettle is settled in at 235-ish and hasn't really moved much so I have just left it there.

I just got back from seeing Buddy Guy after working all day. I'm hungry, and thirsty. I have no beer. It's too late to cook. We all know nothing goes better with blues than beer and BBQ. And I am being tortured looking at those ribs, knowing I'm probabaly going to be scarfing down something from a can, or maybe a hotdog. A microwave hot dog...thunderstorm just popped out of nowhere. Please, at least tell me how they were.

very interesting, I'm liking the throwback into the drums & kettles and integrating new technology and products into the hardcore basic cookers.  Flameboss UDS was a great idea, looking forward to the results of these "primeribs on a stick"
