Well, it time for some ribs.

 

2 slab spare ribs

4:30pm - bbq temp 228

5:30pm - bbq temp 262 - spritz with apple/pinapple vinegar Intermediately

6:30pm - bbq temp 252

8:17pm pulled the ribs as they were doubled over when picked up from the middle.  Also prior to pulling them I probed them with my thermapen and it was like butter.  I have them wrapped up loosely'ish and resting.

Mike, those looks great!! A couple of questions; what is that on the lower grate? also, what kind of ribs are they? thanks!!

Thank you. Those are the trimmed pieces from the pork spare ribs. I figured I could season them, cook them and freeze for later. Maybe cook them in beans, cabbage , greens..ect.
