Best options for searing oils

Recommended Posts

I don't feel like messing around making clarified butter tonight before grilling my steaks on the kamado, so was wondering what are the best alternatives for a high smoke point oil that I can rub the steaks with before the salt/pepper/cayenne rub and then onto the high heat right over the coals.

Grape seed oil is very light with a high smoke point...it's what I use.

Avocado oil has a smoke point of 500 degrees.

Cold pressed avocado oil actually has a smoke point of 560 - 570 degrees F (at least some brands).  Costco carries it here.  It's also great for dressings (very mild taste) and also a very healthy oil (as far as oils go).  I only buy it and EV olive any more.  I'll make Ghee the odd time as I love the flavor it adds - particularly for searing steak!!  I find the combo amazing.

Polyunsaturated fats, even with high smoke points, are not necessarily great for searing in terms of "health" though....saturated (single bond) fats react less with oxygen and produce few byproducts.  They may just ignite at lower temps.  Ghee is probably one of the healthiest oils to sear with.

Grape seed oil is high in Omega 6 (not good), and NOT something you will want to ingest after you research the extraction process.  High heats and hexane often used.
