Hi everyone, I'm a little late but thought I would post my cook for the 4th of July. Started with a rack  of beef back ribs, these are not the plate/chuck ribs with lot of meat on the top. But these were very meaty for back ribs. Then finished with a stuffed meat loaf: ground beef wrapped around 2 pork and Monterrey jack cheese sausage links and covered with a bacon weave. Both the ribs and the stuffed meat loaf were cooked on the Big Joe using oak chunks for smoke. Everything turned out fantastic, but the favorite was definitely the stuffed meat loaf. Will do that again soon.
