Sides.....the forgotten dish!

I know the feeling

Last brisket cook I did, I was so wrapped up in getting the beef sorted I didn't realise I hadn't thought about what I was gonna serve it with

I have a gas smoke box that is so easy to use, so I let my missus take control of that to make sides.

Last cook we did I made up some mac n cheese and baked beans and smoked them over oak for an hour or so as well as pickles and slaw

Everything turned out great

Dang, I thought a crawtater was just something made by Zapps potato chips. Those were pretty awesome. Best chips I have had. Maybe Dub is trying to show Zapps up.  Will have to try this if I can get a recipe.

 

btw, if not from LA and don't know bout Zapps crawtaters, if you get the chance please try them. Not a huge tater fan, but those are next level. Bet Dub is next galaxy..

I usually do an Asian Cole Slaw Roasted creamer potatoes with bacon, scallion, shredded cheese and sour cream, corn on the cob, quinoa salads are nice and some sort of pasta be it mac and cheese or Mediterranean pasta salad and corn bread.

 

Costco has a bagged salad kit with kale, Brussel sprouts and a poppy seed dressing that pretty good. Black beans and corn.  Also make homemade quick pickle of onion, garlic, cucumbers and peppers.  Super easy and perfect for bbqs

- Grilled Peaches --- that sounds great...any prep (dip in cinnamon and sugar before grilling?)   

- Sooooo many people are doing Mac & Cheese --- the cheese must really pick up smoke well---never really tried a lot of cheese with the exception of burgers.

The stuffed peaches were coated in butter then sprinkled with cinnamon and sugar before stuffing. 

 

I've done regular peaches plain or coated. 

 

The regular peaches picture was peaches getting grilled to put in Grilled Peach Reef Jam 

 

Just be careful with Mac and cheese it can suck up a lot of smoke.

Sides would be a good topic for a cooking challenge, and you're right, easily make a meal out of sides.

Well--I am starting to add to my SIDE game.  I made along side my Rib Eyes, asparagus grilled with butter and Meat Church Honey Hog, then drizzled with lemon juice.  And also just grilled Vidallia onions...no oil or anything - just grilled....they came out wonderful!   I topped mine with Peter Luger sauce (because that sauce should ONLY be used with their tomato and onions---not the steak). :)
