I'm almost ashamed to admit that I have never cooked these before :)  I love them though.  Until recently, they weren't available to me locally.  The new Publix has them and I talked to the manager a bit and he's getting me some full racks (4-bone) that have not been cut down into individual bones....

Can't go wrong with either but, I prefer the plates also (usually 3 bones, ribs 6,7 & 8  cut just below the ribeye, yum)
