Dry Aged NY Strip Loin

First attempt at dry aging a NY Strip Loin from Costco. 31 days in my garage refrigerator using the Umai bag. Ended up with 10 steaks at 1.5" thick. I haven't cooked one yet, but if they taste half as good as they look I will consider it a success.

That looks amazing!   How much was the meat?  I saw one at BJs a month back for about $100 --- I held off as I was not familiar with that cut and the marbling (Only tried Rib Eye in past).....but if comes out like this....sign me up!   Hope you cook some soon!

Those strip steaks look really good. Great job with the dry ageing. 

 

I let my son take my dry aging meat locker off to college to use as a dorm refrigerator. I guess I won't be ageing any meat for the next 4 years - LOL

I have to say, when I did a prime ribeye, I was very disappointed compared to the choice. Between the additional price, and the fact that the aging didn’t seem to benefit the prime very much, I won’t do another. I’ll do choice any time.
