philpom's Texas Caviar

 

This is my take on Texas Caviar.  This is great as a side for BBQ sandwiches, grilled chicken or in the case below burnt ends and mashed potatoes.  It's also incredibly simple.

 

What you need:

 

  • 2 cans of whole kernel corn
  • 1 can plain black beans
  • 1 medium red onion
  • 3 cups whole cherry tomatoes cut in to 3rds
  • hand full of fresh cilantro chopped

 

For the dressing:

 

  • 3 TB olive oil
  • 2 TB apple cider vinegar
  • 1 TB mustard
  • 1 TB lime juice
  • salt & pepper to taste

 

Drain and rinse the corn and beans and dice the onion.  Combine everything in a large bowl except the dressing and mix.

 

For the dressing combine everything in a small container with a tight fitting lid.   Shake vigorously until it's emulsified.  Poor over the salad and again mix well.  Chill and serve!

 

What makes this so good and unique?  Cilantro and lime of course!
