Cowboy Ribeye Date Night

Well, last Saturday night the kids went with some friends to see some superhero movie so I invited my better-half to a date-night at home (better steak, better wine)!


We checked out Matador Meats in Plano, TX (http://matadormeat.com) and acquired a USDA prime cowboy cut ribeye (3.1 lbs)!5a13234611cd1_PhotoNov1841635PM.thumb.jpg.afe0df82925a0f37d0c4dd69bd034960.jpg


We also had some special occasion wine-club stash for the date.





Grilled on the KJ classic in the high position (not a reverse sear) for probably about 16-18 minutes total (we like our steaks between rare and medium rare).



We also made up some III Forks cream-style corn (https://recipegoldmine.com/cct/iii-forks-cream-corn.html), some fried eggplant and spinach ... as well as a tomato-mozzarella salad and some flat-bread.




She said she liked it ... :-D  ... Happy wife ... happy life!

ckreef ... we really like that III Forks Cream corn recipe.  We make it exactly like the recipe (linked above) with one exception.  We don't add the "Accent" (in case you don't know, that is a brand name of pure MSG) because my wife reacts to it (a good reason for me to mix my own BBQ rub concoctions).
