Tomato Pie

The fresh basil used in this pie was awesome.   Using Pilsbury refrigerated crusts....not the homemade crust from the recipe below














Had another crust leftover so I used it to make another pie this morning for brunch for the family.
Followed the recipe below, leaving out the red bell pepper and some of the cheese....and added broccoli & sliced portabellas.  I use refrigerated pie crust vs making it from scratch.  One day I'll follow the recipe verbatim and see how it turns out.
Tasty eats that are mighty filling.  I should have used more tomato slices and had better coverage on the top.  My wife and I both really like the flavor the bake tomato slices add to the overall savory flavor.
