Course Black Pepper

In Aaron Franklins book, Franklin Barbecue: A Meat-Smoking Manifesto, he recommends 16 mesh.  Additionally he goes on to say that if you grind it yourself its best to grind it a day or two ahead of use to allow it to mellow out a bit.

Steven Raichlen said the same thing about grinding your own pepper.

I've used this McCormick pepper, very fragrant, and it's the 16 mesh size:

You can get this at Walmart too I think, but it has the red top.  The grey top is "culinary grade", packs a bit more punch.

 

I've found I like it a little smaller, I prefer the Kirkland brand pepper you can buy at Cosco.
