Mileage from 15 inch Vacuum Sealer

I have to make a decision between buying a new 12 or 16 inch vacuum sealers to replace an aging cheap food sealer. 

 

I’m trying to decide between an 12 or 16 inch unit.  Can you actually seal a brisket using an 11 inch bag?  Sealing a brisket is the only situation where I could think of that might require a larger machine for my use since I don’t by sides of beef

I don't think I've seen a chamber vac large enough to deal with a full packer brisket. Wonder how much one that size might cost!

You might want to buy some of the expandable (pleated) vac seal bags meant for large things like a full brisket or a turkey.

It would be very expensive, something like vacmaster VP545, VP731 most expensive I have seen is the vacmaster VP734 double chamber.    All these models are out of my price range.  I am considering either Vacmaster VP112S  or VP215,   Currently I have FoodSaver V4825 but when doing lots of sealing I have to let it cool down, I get the replacement rolls currently from Costco.
