What’s the theory there? The goal here with raising the deflector as well is to not trap an excessive amount of heat down low to reduce the chance of cracking a firebox. And keeps the CI grate out of there as high heat pizza cooks can strip seasoning - so that’s a bonus to the canning rack as a platform for stones with spacers between.
