I thought I had posted this here somewhere but I can't seem to locate it....

 

I got this beautiful Cheshire Pork Ham from Heritage Farms recently.  I removed the skin, prepped it for making fried pork rinds (which I haven't cooked yet) and then did a 30-day equilibrium cure on this ham.  The ham is currently on the rack in the fridge uncovered... this thing is gonna get put into the smoke on the grill in the morning....

I’m always impressed how no part of the pig goes to waste in the South.  Even the cheeks are a delicacy.    

 

I always toss the pig skin from pork butts in the garbage.  Us Canadians are just wasteful like that:-)

I didn't plate it :)  This was, by far, the best tasting ham I have EVER had.  Maybe I am biased because I started out with a high end ham and brought it to completion myself, but this thing was rockin'...
