Hi, I’m from Warwickshire in the UK. 

Bought my KJ Classic II and a shedload of discounted accessories before Christmas. Not used them yet! 

Read a lot. Watched hours of videos. Found the best forum :-)

Have cast iron that will need seasoning inc. Dutch oven. Meat in the freezer. Sous vide raring to go. Good lumpwood....

What should I do first?

Welcome to the forum Chad and congratulations on your Kamado Joe and accessories.  So many choices!  I started cooking a lowly chicken on my KJ because it was an inexpensive and forgiving meat to use while I learned how to light the fire, generate smoke, and control temperature.  Best of luck!

Thank you for your welcome.

i wondered whether I need to ‘burn the kJ in’ first and maybe take advantage of that heat to season the cast iron.

Any thoughts on that ?
