pork belly ideas...

hi all

 

looking for some inspiration, I have 4 pork belly slabs about 1.5 thick (with skin on), i have never cooked this cut of meat before.  i have a pit boss kamado and am pretty good at getting my kamado stable at 225 now.  My pantry is pretty stack from asian to cajun... and my local grocery stores carry a diverse selection

 

ideas please - cooking on Sunday

You might want to check out Steven Raichlen's Project Smoke Season 3 cook of pork belly with Asian spices on steamed buns or check out Adam Perry Lang's recipe for Unctuous Pork Belly from Serious Barbecue.  

I've cooked them both and they are equally delicious.  I posted my cook of Steven Raichlen's recipe here on KG but can't seem to find it.

Pork belly burnt ends are great - try something like this recipe:

you’ll want to take off the skin first - maybe make some crackling to go with your meal? 2-3 hours at around 250F to render soften and dry out, then scrape any fat from the back and finally crisp in a very hot oven or grill (about 450-500F) until puffed up and crunchy.
