I was at an Asian market yesterday and found pork skins......




I got two whole pork belly skins.... 



I cut them into squares and then simmered them in hot water with some of my Man Cave Meal AP Mojo for about 90 minutes....




Drained them off and patted dry with paper towels....




Into the dehydrator for 12 hours at 160f....




This is what they look like after dehydrating... at this stage you can vacuum seal them and keep them around quite a while.. i'd keep them in the freezer...



Then into some oil that is running about 375f....
