Monday dinner - Smoked Meatloaf


It was one of those days where comfort food seemed to make sense for dinner. And what better comfort food than meatloaf, specifically Smoked Meatloaf. No prep pics, but this is a combo of pork, turkey and beef. Mixed with bread crumbs, Ritz crackers, eggs, milk, onion, Worcestershire, and bbq rub. I let it sit in the fridge for a few hours, then it was time to fire up the Goldens'. The Goldens' was set for indirect with the searing plate, grate temp between 325 - 350 F. Just before going on the grill, I seasoned the outside with a bit more Worcestershire and Oakridge BBQ Competition Beef and Pork rub. Into the CI casserole it went, propped up on some aluminum foil to avoid burning the bottom.




After an hour or so it's starting to take on a nice color -




As the meatloaf was nearing the target temp of 160, I brushed on a glaze and added some asparagus. The glaze is a doctored up Sweet Baby Rays w/ ketchup, Worcestershire, AC vinegar, hot sauce, brown sugar, brought to a simmer on the stove to help thicken it a bit.
