Tri-Tip 

Aldi has them. This weeks special. Pre seasoned (steakhouse classic). I bought one despite the pre seasoning. About 2.5 pounds.

 

Reverse sear, @ 225 .

Opened up the bottom vent, top vent on 2. shot up to 450. Put the meat back on to sear on the bottom grate. The Fat hit the fire!

Giving some Beef ribs a try tomorrow. Just rubbed with salt and pepper. Sat in the fridge overnight. Whack them on mid-late morning. Be ready for dinner time!

@JohnnyAppetizer I did about 2 1/2 hours at 120°C/250°F then wrapped in foil once the bark looked set. Kept a probe in until internal temp hit about 85°C/180°F then pulled it off the grill and left to rest for half hour. Total time on the grill was about 4 1/2 hours

I picked up one from them too. Glad to read it came out okay.

Again I follow you lol. I noticed some beef ribs today at Kroger and picked up a pack. I’m going to cook it like a brisket.

I was not going to post....but now..

5 hours at 225-250

finished at 199, probed them and the were tender.

No wrap
