Chicken wings with the SlōRoller

Hi All, Is the SlōRoller appropriate for doing chicken wings in the Kamado Joe? I have seen some YouTube guides that talk about using a Kettle BBQ with a Vortex and getting the BBQ up to around 500f. My concern is the SlōRoller top has “Do not exceed 500f” printed on it so it’s right at the limit heat wise. Anyone any experience doing wings in a Kamado Joe and any advance? Cheers.
