What is the difference between the Kamado Joe heat deflectors and a pizza stone? How do you clean your heat deflectors? Also how do you clean the stainless steel cooking racks?

I clean my heat deflectors by using them. When they accumulate drippings from cooks, I just turn them over and let my next cook burn them off. The one time I did pizza, and a couple of times when I got the temp up in the 500* range, the heat deflectors came off nice and clean -- almost looked like new. My stainless steel cooking racks get brushed off at the end of a cook, and then again when the grill is heating up for the next cook.
