Test Run-Honey Spelt Bread

Sorry no picture of loaf on the Kamado.    Hydration for this recipe was supposed to be 72% but when I was shaping if felt like more than 100% hydration.   I weighed both loafs and combined weight was 1,376g while I was planning on 1,660 g.    What I did was accidentally charged the weight that the hard white wheat artesian flour was supposed to be.   I under charged the Whole spelt wheat flour by 224 g which explains while the hydration didn’t feel right, I was supposed to use 448 g but used 224g.   Next time I will double check weight.  Not a total failure as the loaf still tastes fine.
