Golden Raisin and Walnut bread -test run

Test run was successful.  Taste is nice.  Test run next week Buttermilk bread.  Final dough temp I was targeting 76 F but hit 80 F which was still safe for yeast.  

 

Photos show the following:  pre-weighed ingredients, the dough before adding the Golden Raisin and chopped walnuts,   Golden Raisins and walnuts added, Golden Raisins and walnuts incorporated, end of bulk proofing, pre-shaping, Final shape after final proofing, baking on Kamado and final product with one loaf sliced while still warm. 

 

The Bosch Universal Plus is awesome mixer, it is very versatile.  In my opinion is best best home mixer on market.   With making dough the mixing times are consistent with mixing needed for Industrial Spiral Mixer which makes it easy to convert industrial size recipes to home size.
