Smoked beef country sausage

I blended up a batch of beef sausage the other day and stuffed it in fibrous casings to cure.  Will be smoking them today.

 

Garlic, ground mustard, black pepper, red pepper, celery seed, liquid smoke, sugar based curing salts.
