Setting up a KJ classic to smoke a pork butt

My awesome wife got me a KJ classic. Not sure how to set it up to smoke a pork butt (oh and btw, is a boston butt the same thing as a pork butt). Sorry for the stupid questions, just a newbie

Robert no such thing as a stupid question, the answers on the other hand could be suspect.. That's a good video John posted. Also look around here for his Kamado book lots of useful info. One of these days i'll learn how to add a link to it. Enjoy your classic

Great video John.  I did my first Pork Butt weekend before last.  It was good, but I didn't start my cook at the right time for low and slow, so I ended up raising the temp late in the day to get it too cook faster.  As you show in your video, I should have dry brined overnight, then cooked overnight (for low and slow) the next day, and then after the cook, let it sit longer in a better insulated environment.  I also should have removed some fat cap.  I'm learning.

 

We still have to get through the second half of this butt first.  Then I have another fresh butt vacu-packed in the freezer for next time.

Glad your butt turned out good, every one of mine is a learning experience, and a butt is forgiving.. I use the leftover butt for Tacos.,Enchiladas.

Hey Len:

Do you add seasoning when you prep for Tacos?  Do you fry up the pork a bit or what?

I do both when I fry the pork I add a little of the juice from when I wrapped it. The seasoning is what I find on line, use a little juice also.
