A fine start. I hope you post this in our current "Anything Goes Challenge". It's going to make an awesome entry. 

 

Now that I look closer I think the pictures are out of order B)

Haha, yep, you're right, they are out of order. I will still enter it in the challenge if I may. Thanks for the heads up!

Really good socarrat picture you entered!!! My socarrat tends to be a little hit or miss but I'm getting better at it. You definitely need to be a paella whisperer to get it right. Just listen, the rice will talk to you - LOL 

 

When this virus started to hit seems the world did a run on Bomba rice. When I went to order some at beginning of April I had to settle for Calasparra rice instead. Should still work okay.

You are absolutely right. It's the hissing sound that you have to tune in for and pounce on it as soon as you think it is time. Took me a LOT of tries over years of practicing to get it consistent. I also rotate the pan around the fire to make sure it gets an even cook. Sometimes there are hotter spots.

 

I've used Calasparra as well, it is great. Not quite as thirsty as Bomba, but still makes an awesome paella.
