Classic Carolina Style Pulled Pork Sandwiches

Ingredients

- Pork shoulder (I used a 9 pounder)

- Salt

- Pepper

- Granulated garlic

- Red pepper flakes 

- Apple cider vinegar 

- Buns

- Coleslaw  

 

Directions

I cover the pork butt in salt, pepper, and garlic mixture. Then i cooked it for about 4 hours with apple wood and hickory. I basted it a few times with my Carolina vinegar sauce (directions below.) Once the butt was up to about 165, I wrapped it with more of the vinegar sauce. I let it cook wrapped for about 3 hours. After that, I let it rest for one hour in the cooler. Serve on buns and top with coleslaw and more vinegar sauce! 

 

Vinegar Sauce Recips:

- 2 cups apple cider vinegar

- 1 tablespoon salt

- 1 tablespoon pepper

- 2 tablespoons red pepper flakes 

 

Let it rest in the fridge ideally overnight!

Giving this a try tomorrow as my first low and slow cook on the KJ. I was waiting for an event with more people since my wife and I are empty nesters, but I found a 5 lb butt in the grocery store, so it should be a relatively quick cook.

 

Thanks for the true, heavy vinegar, recipe - exactly what I’ve been looking for!

That creamy coleslaw is a no go. That's a side salad. Proper NC slaw is finely chopped (I use a little counter top food processer) Apple cider and white vinegar, a little salt and pepper, sugar. Mabey a squirt of hot sauce or that mop sauce, Lots of joints include a  pack of Texas Pete with take out sandwiches.
