Dinner Rolls / Slider Buns

Another great side for your BBQ meal is a beautiful yeast roll! These are super easy to make. They also work extremely well as slider buns. You can easily make these larger just by making fewer rolls. I made this batch into 20 rolls. If you plan to make them into sliders you might want to make 16!


Here's the recipe:


13g yeast (4 teaspoons)

60g warm water (¼ cup)

4g sugar (1 teaspoon)

60g butter, softened (4 tablespoons or ½ stick)

95g sugar (½ cup)

3 eggs

235g milk, warm (1 cup)

685g flour (5 cups)

12g kosher salt ( 1 Tablespoon)

Extra Softened butter for topping


Bloom the yeast in the ¼ cup warm water and 4g sugar. Cream the second butter and sugar in the mixer. Add the eggs and milk and mix for another minute or two. Switch to the dough hook, add the flour and salt, and knead until you have a shaggy dough mass. Stop the mixer and let rest for 10 minutes. Mix for 5 to 7 more minutes until the dough is pulling away cleanly from the sides of the bowl. Add additional flour if necessary. Remove bowl from mixer, cover, and let rise for 1 to 2 hours until doubled in size. Punch dough down and divide into 16-20 equal portions and roll those into balls. Place in a greased pan or baking sheet, close together, and baste with softened butter. Cover and let rise for 1 hour. Baste with additional butter. Preheat oven to 350. Bake for 15 to 20 minutes until done. Baste with even melted butter if you wish!
