Ratatouille

The Sauce:

 

4 strips of bacon (optional if you wanna keep this vegetarian)

4 Tablespoons butter

1 red onion, finely diced

2 cloves garlic, finely minced

1 pinch red pepper flakes

1 28oz can crushed tomatoes

1 or 2 big leaves of fresh basil, chopped

1 small bunch of fresh oregano, chopped

2 to 3 teaspoons fennel seeds

2 teaspoons sweetener (honey or sugar)

salt and pepper to taste

 

Cook the bacon in a pan and then remove (and chop finely).  Melt the butter in the pan with the bacon fat.  Add the red onion and cook for 5 to 7 minutes until they become translucent.  Add the garlic and red pepper flakes and cook for another minute or two.  Add the crushed tomatoes, basil, oregano, fennel seeds, chopped bacon, and sweetener.  Stir well and bring to a simmer.  Simmer covered for at least 30 minutes.  Longer is better.  If you can make the sauce a day in advance, do it :)

 

The Rest:

 

Zucchini

Yellow Squash

Eggplant

Roma Tomatoes

 

Slice them to whatever thickness you like.  I went for about 1/8".  

 

Dump the sauce into a 12" pan.  I used a deep dish pizza pan.  Layer your vegetable slices as shown.

 

Cook at 375°F covered with foil for 30 minutes.  Remove the foil and cook for another 25-30 minutes.
