Homemade pizza sauce is quick and easy, especially for this fresh sauce for a Neapolitan style pizza.  This fresh sauce just basically requires putting the ingredients in a blender and pulsing it a few times.  This sauce can also be made into a traditional cooked sauce very easily as well.  Here are the ingredients:


1 28oz can whole peeled tomatoes
1 tbsp extra virgin olive oil
1/2 tsp kosher salt
1/2 tsp sugar
1 clove garlic, minced
1/4 tsp red pepper flakes
1/4 tsp dried oregano
1/4 tsp dried basil


Put the tomatoes plus about half of the liquid in the can into the jar of your blender.  Add the rest of the ingredients and pulse 3 or 4 times just enough to break up the tomatoes.  Transfer the sauce to a jar and keep in the refrigerator for up to one week.  To make a cooked sauce out of this, add all of the ingredients to a saucepan or chef's pan (include all of the liquid from the can of tomatoes.)  Break the tomatoes up (or use can of crushed tomatoes instead) and simmer uncovered until the sauce thickens to your preference.

I used this sauce on some thin-crust pizzas this week and it worked really well during the cook, tasted great, and, most importantly, was well-received by Mrs. LRJ! The uncooked sauce does really well on thin pizza which is on the stone for only a few minutes.
