Homemade Bacon - Morton Tender Quick

Making homemade bacon from pork belly is a lot less difficult than you might imagine.  Making a simple dry cure with Morton Tender Quick or a homemade version of it is quite easy.  If you don't have access to Tender Quick, here's a recipe to make it from scratch:

1 cup (200g) Kosher Salt
1/2 cup  sugar (100g) 
3 1/4 tsp (30g) Pink Curing Salt (Prague Powder #1)

This recipe makes a LOT more than you need but it keeps indefinitely or you can just make a lot less by scaling it down.  

The key to making this process work is knowing how much cure to use.  You need to use 2.5% of the weight of your pork belly.  In my video here, my pork belly slab weighed 1077 grams.  So multiply that by 0.025 to determine that *I* needed 27 grams of my curing mixture (Morton Tender Quick.)

For a typical pork belly, 7 days is enough time to cure it completely.  You can let it go an extra day or two if you wish but don't cut it short.  You can also get as creative as you like with the seasoning and flavoring you choose to introduce to your bacon.

If you don't want to cold smoke your bacon, you may smoke it at as low a temperature as possible until your bacon reaches an internal temperature of about 145-150°F.

WOW! The price of it from Amazon seems pretty high. I bought two bags from a local grocery

store and paid $3 and change per bag. I use it for bacon, jerky, pastrami and sausage.

Great stuff!

When I need an item; Finding equitable prices. Not "fire sales" just good for both the seller and buyer.

 

Amazon seller price asks are many times higher than other sources. Sometimes a better price is offset by an outrageous shipping fee. Too bad. eBay went the same way long ago.

 

The Prime shipping fee is always built in to the price ask.

 

Beware. Low cost  Prime shipping may take a long while with ANY carrier. Smart Post is not so fast. You have to contact the seller or guess what shipping they use.

The store I purchased the TQ from is an upscale grocery store in our city and it is their

regular price. That price is about what other local grocery stores are charging and not a

Fire sale price. I like to buy from and support local businesses when I can.

I only use Amazon 2 to 3 times per year, if that, and don't have a prime account.

I agree with you on the shipping costs Amazon charges. They can get you if you're not careful.

- On occaision though normally coinciding with fall (hunting season) the Web Restaursnt Store runs a sale on Morton Tender Quick. Last time I bought during the sale it ran $2.27 a bag. It is running at 3.87 a bag now. Shipping is reasonable and quick.

- Additionally at times they have shipping thresholds where shipping is free.
