Bourbon Glazed Pepperoni

This is super awesome and super easy to make...


1 1/2 cups bourbon or beer

3/4 cup sugar

1 tsp dry mustard

1 to 2 pepperoni sticks or equal amount of your favorite sausage


Preheat your grill to 250°F with some smoke of your choice


Combine the glaze ingredients in a saucepan and preheat on the stove if you wish while the grill is preheating.  Place the glaze on the grill and let it simmer and reduce in the smoke until it thickens enough to coat the back of a spoon.  Add your sliced pepperoni or sausage.  If you are adding uncooked or uncured sausage, make sure it simmers in the glaze long enough to reach 165°F.  If you are using cured or pre-cooked sausage, don't let it overcook in the glaze... Just let it steep there for about 15 minutes or so.
