Have a nice little T-Bone sitting in the fridge with some kosher salt sprinkled all over...going to sear it directly over some hot coals (raised directly up below the grate), and then bring it up to temp on the cool side of the grill.  Using the kamado in "kettle" mode today!

I’m cooking Cornell Chicken for the 2nd time in a couple of weeks. First try was just for me and the wife. We liked it so much I’m cooking it up for a Father’s Day gathering! Serving with garlic and butter roasted new potatoes, grilled corn on the cob and homemade banana pudding. Mmmmmmm! I’ll try to post pics once I get to cooking.
