SmallBBQr
We love so many different cheeses for many different purposes it is hard to say if we have one favorite, but our main everyday "have a piece of cheese" with a glass of wine is Manchego (Costco has it too). Sheep's milk cheese - creamy, buttery, nutty. But, we always have old/sharp aged cheddar, Swiss Gruyere, Parmigiano-Reggiano, fresh mozza....cheese drawer is always filled up! daninpd
Cambozola and Saint Andre are two favorites at the moment. I'm like @SmallBBQr with a stuffed cheese drawer, and every trip to Trader Joe's is an adventure and a danger for it not to close. Oh, and the "Savory Thin" crackers at TJ's and Blue Diamond "Nut-Thins" are perfect crunchy nothings that let the cheese shine without adding too much to the game. Grooby
my favorite cheese is actually some kind of smoked cheese that I had when visiting Hokkaido Japan. I actually have no idea what kind of cheese it was but I purchased it at a 7-11 there. It was just awesome pairing that with beer. I am not sure if anyone else here had that before. I've been trying to figure out what kind of cheese it was and try to re-created it at home.
deity6667
I just prepared this Camembert for baking in the kamado - will turn out great and is a favourite as the weather turns warmer here for a great lunch addition. SmallBBQr
Received some Black Lemon Gouda this year for Christmas....was very interesting due to color and subtle lemon flavor. Looks amazing on a cheese board!

keeperovdeflame
Absolutely love quality cheeses and can't say I really have a favorite. What I like depends on what I am doing with it. Some cheeses take the foreground and some paint a complimentary background. Some melt better than others, some grate better and on and on. I have a special fondness for Havarti with Caraway seeds, truly amazing nutty flavor combination. A really good French Brie cut in half with dental floss, and sprinkled with herbs and crushed pecan then baked to melty perfection is absolutely perfect with a piece of crusty bread and a nice Pinot. Assiago, Gorgonzola, fresh goat cheese and Gruyere are always in my cheese drawer. There is a cheese maker in Point Reyes Cali called Cowgirl Creamery, and I like absolutely love pretty much everything everything they make. My wife and I also love cheese shops and little places that specialize in cheese boards and charcuterie. There's a place in Aspen, Colorado called "Meat and Cheese, and a place in San Antonio Texas called "Cured" that are truly wonderful and great for a light meal and a fine glass of wine. Half the fun of taking road trips is finding little gems like these along the way. https://cowgirlcreamery.com https://meatcheese.avalancheaspen.com https://atpearl.com/eat/cured/

1MoreFord
My tastebuds are average at best and I like Kroger sharp or extra sharp cheddar. I also like smoked cheddar and smoked gouda. I also found and loved another smoked cheese at a large Kroger in the deli dept that I can't remember the name.
