Fireboard Gone Nutty, Me Thinks

Trying to get a stable 160 degrees for John's Smoked Brown Sugared Salmon.  I can't get FB to not go to my maximum setting.  I have restarted and changed my maximum fan speed from 50 to 40 and it still goes to whatever my maximum fan speed setting is.  And it is on "Auto."  What in the world am I not doing correctly?

John, do you just drop them directly on the grill or do you lay them on foil and then add them to the grill?

 

I was unimpressed with the cedar planks.

John, that’s great advice!!

 

I typically have my max fan speed at 50% while cooking and up at 100% to start up the KJ.

 

I will try 5% on my next smoke.
