Kefta Kabobs

Here is a great kefta kabob recipe.

1lb of ground beef (85/15)

1lb of ground lamb

2 tsp paprika

1 tsp ground coriander

1 tsp garlic powder

1/2 tsp kosher salt

1/2 tsp black pepper

1/2 tsp cumin

1/2 tsp cinnamon

1/4 tsp cayenne pepper

1/4 cup of freshly chopped parsley

1/4 cup of freshly chopped mint

Mix the spices well in with the ground beef and lamb.

Form the meat onto the skewers. Do not put too much meat on the skewers. The more you put on, higher are the chances that the meat will fall off the skewer.

Turn the skewers every minute or two. Total cook time will be around 5 minutes at about 400F. Very fast cook as the metal skewers cook the meat from inside to out.

Plated with tabouli, hummus, and pita bread.

This looks great and I am sure it tastes good as it looks. This I will have to do.

Question: Did you use regular tandoor square skewers or ??? . If tandoor ..did you cut them shorter to fit in grill to be able to shut lid? Or did you just lay them across the open Joe and cook that way.

I second it-- great cook and great photos--makes me want to make it right now.

 

I am interested in short flat skewers the would fit on the kamado also.

 

As for hanging vertically in the pit barrel cooker Steven Raichlen has some very nice ones that work great on a gas grill where you a lot of room. I have them but they are long for the Kamado.

Ok guys, sorry for not getting back to you sooner.  Here are the skewers I purchased.

They're great for kabobs.  But can be flimsy if you put big pieces of meat like I did on this cook.

With that said, they're great for the price!  They're long enough where I can have the Classic Joe's lid closed and the skewers will sit on the base of the kamado.  So you just have to lift the lid an inch and just turn the skewers over without having to open the dome all the way.

So you have the handle out side of the lid and just open the lid enough to turn ---BRILLIANT!!! in should have thought of that.
