Acorn Squash

qugu7uza.jpgTonight cooked among other things, Acorn squash and it was amazing. So easy too. Just cut in half, remove seeds and junk, brush some olive oil on it, add about 2 Tablespoons of brown sugar to each half (or less, to taste) and then sprinkle some cinnamon over the top and then grill it. In about an hour at 300 (or less) it will be very soft and get carmelized. They are hard to burn so timing is not very critical. It was really fantastic, and a great side for meat.

Nice looking meal. I have had acorn squash on the kamado and it turns out really good. Been meaning to do it again but have not got around to it.

I love acorn squash. I have never had it on the grill. I will have to give it a whirl. I usually go the less healthy route and put a pat of butter inside with brown sugar instead of olive oil.

Heathy meal LOL, maybe if you didn't eat too much pork!  I did trim as much fat as I could off it. The squash looks brown as the cinnamon makes it look that way. I love cooking everything on the Kamado and then you have little clean up. But for different temps maybe I need another one (eyes rolling)...
